Recipe : Chorizo Chickpea Mash

With the arrival of the warmer months and lighter evenings, the need for quick, easy and delicious dinners is definitely growing. Nobody wants to slave over a hot stove for hours on a sunny day and there is no real need to. Lately I’ve been trying some new, tasty recipes which are super-easy to make and take no time at all. They are also nutritious and full of flavour – just what you need when trying to live a healthy, balanced lifestyle!

First up, we have an egg, chorizo and chickpea mash. This takes around 25 minutes in total to prepare and cook, which is perfect for those days that you want something quick and tasty to fill you up in the evening. It’s also a great vegetarian dish, however you could substitute the egg with meat or fish if you prefer.

Ingredients – serves 2

100g chorizo
1 tsp cumin seeds
100g onion
400g chickpeas (drained)
250g spinach
2 eggs


Chop the chorizo into small chunks. Add them to a heated frying pan with the cumin seeds. Cook over a medium-low heat for a few minutes, until the oil starts to release. Add the onion and cook for about 5 minutes, until softened. Add the chickpeas and mash together. Meanwhile, heat another frying pan and add a little oil or butter. Add the spinach to this pan and stir until it wilts.

Boil the eggs in a saucepan of boiling water for 4 minutes (until soft boiled). Cool the eggs until cold water before carefully peeling the shell.

Divide the chorizo and chickpea mash between two and add the egg on top. Season to your taste with salt and black pepper.
